I have always loved cooking, despite at home there was very little interest for it. I stated to make desserts when I was a kid, using the cooking books I had at home. I was lucky to have 3 siblings that would eat everything, even the burnt short pastry… Some years ago, when I was diagnosed some food sensitivity, I shifted into dairy free, gluten free, and vegan recipes. Now that the sensitivity is controlled, I do a bit of all. Beginning of 2019, during a year of learning and experimentation, I decided to join a professional patisserie course at NoLab Academy in Milan. To me there is no doubt that pasty making is an art, and in fact extremely similar to pottery. I would buy every tool twice, one for the pottery studio and one for our kitchen… I enjoy a lot the cooking process, but I enjoy even more the process of creating new dishes, with its big dose of experimentation.
